Lab #3: Aldehydes and Ketones

Introduction: In this lab you will use your “Food Chemistry Molecular Model Kit” to construct and explain a variety of molecular models. You will need to take a few photos of your work. Please make sure that you photograph your models on a solid color surface such as a wood table or a solid color floor. Thanks!

Pre-Lab: In complete sentences, please explain the differences between aldehyde and ketone molecules.

Activity:

A vanillin molecule is shown below.

Step 1: Use your model kit to construct a molecular model of vanillin. Include a photo of your model here. Using any method you prefer (such as hand writing a few labels to set near your model, or using a photo editing feature to make notes on your photo), identify the following:

a. The phenol group in vanillin

b. The aldehyde group in vanillin

c. The ether group in vanillin

Step 2: Construct
two structural isomers (also called constitutional isomers) of vanillin. Include a photo of your isomers here.

Step 3: Name your structural isomers.

Step 4: Identify at least one oxygen-containing functional group in each of your structural isomers.

Step 5: Use your model kit to construct a molecular model of ethyl vinyl ketone. Include a photo of your model here. Using any method you prefer (such as hand writing a few labels to set near your model, or using a photo editing feature to make notes on your photo), identify the following:

a. The ketone group in ethyl vinyl ketone

b. The alkene group in ethyl vinyl ketone

Step 6: Construct
two structural isomers (also called constitutional isomers) of ethyl vinyl ketone. The first isomer should contain an ether group. The second isomer should contain a ring. Include a photo of your isomers here.

Step 7: Name your structural isomers.
